¡Olé! - Mexican Chicken Soup and Birmingham

I finally found a good stock/soup pot. Honestly, it is the one I had originally considered, but wanted to shop around a bit to make sure I was getting a good deal. I also wanted to live without one for a bit to see if it was something I really needed. it was. Dear lord, it was.

We are breaking it in today with a giant pot of chicken rice soup. Well, it started off being chicken rice soup but a quick clean out of the refrigerator produced some cooked pasta, so I think I will just cook the rice separately and people can add rice or pasta to their bowl. Cleaning out the refrigerator also gave us the saved tops of celery stalks with leaves, 2 halves of onions and 2 bunches of cilantro that needs to be used today. It all went into the soup, which is now Mexican chicken rice/pasta soup. I might add a drained can of diced tomatoes and half a jalapeno - because I am tough like that. I have some fresh salsa that needs to be used before we leave, so I may just serve the soup with the salsa on the table and people can add to it as they see fit.

Wednesday morning we are heading to Birmingham for an over nighter. I haven't decided what we will do Wednesday - we are thinking about the Birmingham Civil Rights Institute and Penzeys. Thursday Marty has a meeting all day so the boys and I will head to Whole Foods to stock up. Wednesday night we will eat at Red Robin but all other food will be brought from home or the hotel's breakfast offerings. (Alex and I will eat breakfast we bring from home.) Once I solidify the meal plan I will let you know.
